  • 1 cup 200 g caster sugar
  • ½ cup 115 g unsalted butter, melted
  • 2 large eggs
  • 1 cup 140 g vanilla yogurt
  • 2 tablespoons 30 ml heavy cream
  • 1 tablespoon lemon zest
  • 2 tablespoons 30 ml lemon juice
  • cups 205 g all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup 150 g fresh blueberries
For the Blueberry Syrup
  • ¾ cup 100 g blueberries
  • 2 tablespoons 30 g granulated sugar
  • 3 tablespoons 40 ml water
For the Crumble
  • cup 80 g all-purpose flour
  • ¼ cup 50 g unsalted butter, melted
  • 3 tablespoons 45 g granulated sugar
For the Cheesecake Filling
  • 7 oz 200 g cream cheese, softened
  • cup 45 g powdered sugar
  • 1 teaspoon 5 ml vanilla extract

Method
 

  1. In a small bowl, combine the flour, melted butter, and sugar until crumbly. Refrigerate the crumble while you prepare the remaining components.

  2. In a small saucepan, cook the blueberries, sugar, and water over medium heat for about 5 minutes. Blend until smooth, let the blueberry syrup cool completely, and set aside.
  3. In a large mixing bowl, add the melted butter.
