Divide the batter evenly among the lined cupcake cups.
Bake at 180°C (350°F) for 18–21 minutes, or until a toothpick inserted into the center comes out clean.
Let the cupcakes cool completely. and make a small hole in the center of each cupcake.
Fill with the cooled lemon curd.
Pipe the prepared vanilla buttercream over the cooled cupcakes.
Decorate with lemon slices or mint sprigs, if desired. Serve and enjoy.
