Ingredients
  

For the Cookies
  • ¾ cup 200 g unsalted butter, softened
  • ½ cup 140 g granulated sugar
  • cup 93 g brown sugar
  • ¼ cup 60 g plain curd (yogurt)
  • 1 teaspoon 5 ml vanilla extract
  • cups 300 g all-purpose flour
  • 1 tablespoon 5 g cornstarch
  • ¾ teaspoon 3 g baking soda
  • ½ teaspoon 2 g salt
  • ½ cup 70 g white chocolate chunks
For the Strawberry Filling
  • cup 100 g cream cheese, softened
  • ¼ cup 60 g strawberry jam
Optional Toppings
  • Extra white chocolate chunks
  • Freeze-dried strawberries

Method
 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a large mixing bowl, beat the melted butter, granulated sugar and brown sugar together until smooth and well combined.

  4. Add the curd mixture to the butter-sugar mixture and whisk until fully incorporated.

  5. Gradually add the all-purpose flour, cornstarch, baking soda, and salt. Mix until a soft cookie dough forms.

  6. Continue folding the dough with a spatula until no dry streaks remain.
