S’mores are always a fun combination of chocolate, biscuits, and marshmallows, and these cookies bring all three together in one soft-baked dessert. The dough is made with white chocolate chips, chocolate chips, crushed digestive biscuits or graham crackers, and marshmallows tucked into the center.

Each cookie has lightly golden edges, a soft middle, and a sweet marshmallow surprise inside. Once cooled, the cookies are finished with a smooth white chocolate glaze, small chocolate pieces, and more crushed biscuits for a s’mores-inspired topping.

Ingredients
  

For the Cookies
  • ¾ cup 170 g unsalted butter, softened
  • ½ cup 100 g granulated sugar
  • ¾ cup 165 g light brown sugar
  • 1 large egg
  • 1 egg yolk
  • 2 tsp vanilla extract
  • cups 280 g all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • ½ cup 90 g white chocolate chips
  • ½ cup 90 g chocolate chips
  • 8 -10 digestive biscuits or graham crackers roughly crushed
  • 8 -10 marshmallows
For the White Chocolate Glaze
  • 1 cup 170 g white chocolate, chopped
  • 2 -3 tbsp 30–45 ml heavy cream
For Topping
  • Small chocolate pieces
  • Crushed biscuits or graham crackers

Equipment

Method
 

  1. Add the softened butter to a mixing bowl and beat until creamy.

  2. Add the granulated sugar and brown sugar.

  3. Add the vanilla extract. Add the egg and egg yolk.

  4. Then beat until fully incorporated.

  5. In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture and mix until a soft cookie dough forms.

  7. Add the white chocolate chips and chocolate chips, then mix until evenly distributed.

  8. Fold in the crushed biscuits and mini marshmallows.

  9. Take a portion of dough, place a marshmallow in the center, and cover it completely with the dough.

  10. Arrange the filled cookie dough portions on a parchment-lined baking sheet, leaving space between each cookie.
  11. Bake at 350°F (175°C) for 10–12 minutes, or until the edges are lightly golden.
  12. Remove the cookies from the oven and allow them to cool completely on a wire rack.
  13. For the glaze, melt the white chocolate with the heavy cream and stir until smooth.
  14. Spread the white chocolate glaze over each cooled cookie.
