I wanted to make cookies that felt a little more fun than the usual batch, so I added crushed biscuits, white chocolate chips, and rainbow sprinkles to the dough. The idea was simple, but the cookies turned out even better than I expected.

They have soft centers with lightly golden edges, little bits of crunchy biscuits, and sweet white chocolate throughout. The rainbow sprinkles make them look like a little slice of cake in cookie form, especially once they are dipped in the white chocolate glaze.

  • 170 g unsalted butter softened
  • 120 g granulated sugar
  • 120 g brown sugar
  • 1 large egg
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 250 g all-purpose flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 100 g crushed biscuits
  • 80 g white chocolate chips
  • 50 g rainbow sprinkles
For the White Chocolate Glaze
  • 120 g white chocolate
  • 45 ml heavy cream

Method
 

  1. Add the softened butter to a mixing bowl.
