There was no big baking plan behind these cookies. A couple of ripe bananas were ready to be used, and the pantry already had rolled oats, peanut butter, and a little honey.

- Add the mashed banana, honey and peanut butter to a mixing bowl . Stir until the mixture is smooth and well combined.

- Add the cinnamon powder and salt, then mix thoroughly to distribute the ingredients evenly.

- Add the rolled oats and gently mix until evenly incorporated.

- Fold in the dark chocolate chunks until well distributed throughout the mixture.

- Divide the mixture into equal portions and shape each portion into a cookie.
- Arrange the cookies on a lined baking tray and gently flatten them to an even thickness.
- Bake at 170°C for 12–15 minutes, or until the edges are lightly golden.

- Allow the cookies to cool on the baking tray for a few minutes, then transfer them to a wire rack and cool completely.
- Transfer the cookies to a serving plate and serve as a snack or alongside your favorite beverage.
