I had some fresh strawberries sitting in the kitchen and wanted to turn them into something a little more special than the usual strawberry bake. The idea of making a quick strawberry jam for the muffins came together perfectly, and once I added the buttery streusel on top, I knew I had to share this recipe with you all.

These Strawberry Muffins have juicy strawberry pieces throughout, little swirls of homemade strawberry jam, and a crumbly streusel topping that gives every muffin a nice finish. They’re simple enough for a weekend bake and lovely with breakfast or an afternoon cup of tea.   • Fresh strawberries
  • Sugar
For the Streusel Topping
  • 2 tablespoons butter softened
  • 1/6 cup granulated sugar
  • 1/4 cup all-purpose flour
For the Muffins
  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup sliced strawberries

Method
 

  1. In a small saucepan, combine the fresh strawberries and sugar. Cook over medium heat, stirring occasionally, until the strawberries soften and release their juices.
  2. Lightly mash the strawberries and continue cooking until the mixture thickens into a jam-like consistency. Remove from the heat and let it cool completely.
  3. In a small bowl, combine the softened butter, granulated sugar , and all-purpose flour. Mix until crumbly, then set aside.

  4. Mix the granulated sugar and melted butter until well combined.

  5. Add the eggs and vanilla extract, then whisk until smooth.

  6. Add the vegetable oil and mix until fully incorporated.

  7. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
