Coffee Walnut Tea Cake Recipe

I wanted to bake something that would go well with my coffee, and this Coffee Walnut Tea Cake came to mind. I had some walnuts in the kitchen, so I toasted them first and decided to add coffee to the cake as well.

The cake has a soft, buttery crumb with a noticeable coffee flavor and little bits of toasted walnut throughout. I also like the extra walnuts at the base because they add a slightly nutty finish to each slice.

Ingredients
  

  • ¾ cup 170 g unsalted butter, softened
  • ¾ cup 150 g granulated sugar
  • 1 tsp vanilla extract
  • ½ cup 120 g plain yogurt
  • cups 190 g all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 2 tbsp instant coffee powder
  • ½ cup 120 ml hot water
  • ½ cup 60 g walnuts, chopped and toasted
  • 2 tbsp chopped walnuts for the base

Method
 

  1. Add the softened butter to a mixing bowl and beat until creamy.

  3. Add the vanilla extract and yogurt, then mix until well combined.

  4. In a separate bowl, combine the all-purpose flour, baking powder, baking soda, and salt.
  5. Add the dry ingredients to the wet mixture and mix until incorporated.
