Add the vanilla extract and mix well.
In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt.
Gradually add the dry ingredients to the wet mixture.
Mix until a soft dough forms.
Add a drop of blue food coloring and mix until the dough is evenly blue.
Add the white and black chocolate chips and mix until evenly distributed.
Scoop portions of dough onto a parchment-lined baking sheet and gently flatten each one.
Place a chocolate sandwich cookie in the center of each flattened dough portion.
Bake at 350°F (175°C) for 10–12 minutes, or until the edges are lightly set.
Remove from the oven and allow the cookies to cool completely.
For the glaze, melt the white chocolate with the heavy cream and stir until smooth.
Pour the white chocolate glaze over the cooled cookies.
Sprinkle the crushed chocolate sandwich cookies over the glaze.
Allow the glaze to set, then serve and enjoy.
