Preheat the oven to 350°F (175°C) and line a small baking tray with parchment paper.
Spread the all-purpose flour evenly onto the prepared baking tray.
Bake the flour for 5 minutes to heat-treat it, then let it cool completely before using.
In a mixing bowl, combine the granulated sugar and brown sugar.
Add the softened butter.
Mix until the butter and sugars are smooth and creamy.
Add the vanilla extract and milk, then stir until the mixture is smooth and well combined.
In a separate bowl, combine the cooled, heat-treated flour and salt.
Gradually add wet ingredients to the dry ingredients
Add mini chocolate chips and folding gently with a rubber spatula until mostly combined until a smooth, soft cookie dough forms with no dry flour remaining.
Scoop portions of the dough and roll them into smooth bite-sized balls.
Let the cookie dough bites rest for 5 minutes to firm up slightly.
Decorate the cookie dough bites with rainbow sprinkles, shredded coconut, or mini white chocolate chips, if desired.
Serve immediately, or chill for 15–20 minutes before serving.
