The idea for these No Bake Cookie Dough Bites came from one of those moments when I wanted something sweet but didn’t feel like baking. I mixed together a simple batch of edible cookie dough, rolled it into bite-sized treats, and finished each one with a different topping. Before long, the plate was filled with colorful little bites that looked just as fun as they tasted.
Each bite has a smooth, buttery cookie dough center filled with mini chocolate chips, and the optional toppings let you create a variety of flavors and finishes. Decorate them with rainbow sprinkles, shredded coconut, or mini white chocolate chips for a treat that’s perfect for parties, dessert platters, or homemade gift boxes.
