The bananas had reached that stage where nobody was going to eat them as they were, so I started thinking about what else I could make with them. Banana bread was the obvious choice, but then I noticed the dark chocolate chunks sitting in the pantry.
That little change of plan turned into a batch of soft banana cookies with chocolate tucked into almost every bite. The cookies stay tender in the center with lightly golden edges, while the ripe banana gives the dough a subtle fruity sweetness that works surprisingly well with dark chocolate.
It’s a fun one to keep alongside Biscoff Banana Bread Cookies and Chocolate Hazelnut Cookies when you want to bake something a little different.
