Monster Cookies Recipe

These cookies started with one simple idea: make something that looks a little wild and still tastes really good. I went with blue cookie dough, white and black chocolate chips, and a chocolate sandwich cookie hidden right in the center.

Once baked, the cookies have soft centers with lightly crisp edges, and the sandwich cookie in the middle makes them extra fun to break into. The white chocolate glaze and crushed cookies on top add even more chocolate flavor.

These Monster Cookies combine blue-tinted cookie dough, two kinds of chocolate chips, and a chocolate sandwich cookie baked into the center. They are finished with a smooth white chocolate glaze and crushed cookies.

Ingredients
  

For the Cookies
  • 170 g unsalted butter softened
  • 120 g granulated sugar
  • 120 g light brown sugar
  • 1 large egg
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 250 g all-purpose flour
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 –2 drops blue gel food coloring
  • 80 g white chocolate chips
  • 70 g black chocolate chips
  • 12 small chocolate sandwich cookies
For the White Chocolate Glaze
  • 120 g white chocolate chopped
  • 45 ml heavy cream
For Topping
  • 4 –5 chocolate sandwich cookies crushed

  • Electric hand mixer
  • Whisk
  • Rubber spatula
  • Measuring cups and spoons
  • Baking sheet
  • Parchment paper
  • Cookie scoop
  • Small microwave-safe bowl
  • Spoon
  • Wire cooling rack

Method
 

  1. Add the softened butter to a mixing bowl and beat until creamy.

  2. Add the granulated sugar and mix until well combined.

  3. Add the brown sugar and beat until light and fluffy.

  4. Add the egg and egg yolk and mix until fully incorporated.

  5. Add the vanilla extract and mix well.

  6. In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt.

  7. Gradually add the dry ingredients to the wet mixture.

  8. Mix until a soft dough forms.

  9. Add a drop of blue food coloring and mix until the dough is evenly blue.

  10. Add the white and black chocolate chips and mix until evenly distributed.

  11. Scoop portions of dough onto a parchment-lined baking sheet and gently flatten each one.
  12. Place a chocolate sandwich cookie in the center of each flattened dough portion.

  13. Bake at 350°F (175°C) for 10–12 minutes, or until the edges are lightly set.
  14. Remove from the oven and allow the cookies to cool completely.

  15. For the glaze, melt the white chocolate with the heavy cream and stir until smooth.
  16. Pour the white chocolate glaze over the cooled cookies.

  17. Sprinkle the crushed chocolate sandwich cookies over the glaze.

  18. Allow the glaze to set, then serve and enjoy.
