Gordon Ramsay Sticky Toffee Pudding Recipe

Gordon Ramsay Sticky Toffee Pudding Recipe

I wanted to make a dessert where the sauce is just as important as the pudding itself, and sticky toffee pudding is a natural choice.

Softened dates are blended into the sponge before baking, then the warm pudding is served with homemade toffee sauce and ice cream. It takes a few separate steps, but most of the work goes into creating that rich date-based sponge and smooth sauce.

The pudding has a soft, dense texture from the dates, with dark brown sugar adding a deeper sweetness to the sponge. Warm toffee sauce poured over the top makes each slice richer, while ice cream adds a cool contrast.

If you enjoy classic pudding-style desserts, Sticky Toffee Pudding Cookies and Lemon Creme Brulee are two more recipes to try.

Sticky toffee pudding is the kind of dessert where the individual components work best when served together.

The date sponge provides a substantial base, while the warm toffee sauce adds a smooth, buttery layer over each slice.

Adding ice cream at the end gives the warm pudding another texture and temperature contrast, making it easy to serve directly from the baking dish.
