This Chocolate Coffee Cake came together from two things I almost always enjoy baking with: coffee and dark chocolate. I liked the idea of letting the coffee flavor run through the cake itself instead of simply serving coffee alongside it, then adding dark chocolate chunks for little pockets of chocolate throughout the loaf.

It turned out to be a simple bake that works well when you want something homemade without a long ingredient list. The cake has a soft, moist crumb with a noticeable coffee flavor and melted dark chocolate in each slice.

The condensed milk gives it a gentle sweetness, while the coffee and chocolate keep the flavor from becoming too sugary. If you enjoy baking with chocolate, Double Chocolate Muffin and Espresso Chocolate Chunk Cookies are two more good options to try.

  • tbsp instant coffee
  • 125 ml milk
  • 100 g butter
  • 15 g Demerara or brown sugar
  • 200 g condensed milk
  • 125 g all-purpose flour
  • 70 g dark chocolate chunks
  • 1 tsp baking powder
  • ½ tsp baking soda
  • A pinch of salt

Method
 

  1. Add the softened butter to a mixing bowl and whisk until smooth and creamy.

  3. Add the brown sugar and continue whisking until the mixture is smooth.

  4. Mix the instant coffee with the milk, then add it to the bowl and whisk until fully combined.

  5. Add the all-purpose flour, baking powder, baking soda, and salt.
  6. Gently mix the dry and wet ingredients until a smooth batter forms. Do not overmix.

  7. Fold the dark chocolate chunks into the batter.

  8. Pour the batter into a prepared loaf pan and smooth the top.
  9. Bake in a preheated oven at 180°C (350°F) for 35–40 minutes, or until a toothpick inserted into the center comes out clean.

  10. Remove the loaf from the oven and let it cool in the pan for a few minutes. Transfer it to a cooling rack and allow it to cool completely.
