Strawberry Pound Cake Recipe

Fresh strawberries always make me want to bake something, and this time I decided to put them into a simple pound cake. I wanted the strawberries to be the main flavor, so I added chopped berries right into the batter and saved some for the cream cheese icing.

The cake comes out soft and buttery with little pieces of strawberry throughout. The strawberry cream cheese icing adds a sweet, creamy finish and makes each slice taste even more like fresh strawberries.

This strawberry pound cake combines a buttery cake with fresh chopped strawberries and a simple strawberry cream cheese icing. The fresh berries add little pockets of fruit throughout the tender loaf.

For the Cake
  • 170 g unsalted butter softened
  • 150 g granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 180 g all-purpose flour
  • 12 g cornstarch
  • ¾ tsp baking powder
  • ¼ tsp salt
  • 60 ml whole milk
  • 150 g fresh strawberries finely chopped
For the Strawberry Cream Cheese Icing
  • 180 g powdered sugar
  • 15 g butter melted
  • 60 g cream cheese
  • 80 g fresh strawberries mashed

Method
 

  1. Add the softened butter to a mixing bowl.

  4. Add the eggs and beat until fully combined.

  5. In a separate bowl, whisk together the all-purpose flour, cornstarch, baking powder, and salt.

  6. Gradually add the dry ingredients to the wet mixture and mix until combined.

  11. Remove the cake from the oven and allow it to cool completely.
  12. For the icing, whisk the powdered sugar and melted butter until combined.
