Raspberry Cake Filling Recipe

Sometimes a cake just needs a little something between the layers, and raspberry filling is one of my favorite ways to add it. I wanted something fruity, slightly tart, and easy to make, so I cooked down some raspberries with sugar, lemon, and a little vanilla.

It turns into a thick, spoonable filling with plenty of raspberry flavor. I especially like the little pieces of berries throughout because it makes the filling feel homemade rather than completely smooth.

You can use this raspberry filling between cake layers, inside cupcakes, spread onto cookies, or spooned over cheesecake and other desserts. If you have some raspberries waiting in the fridge or freezer, this is a simple way to turn them into something you can use in several different bakes.

This quick raspberry filling comes together on the stovetop with just a handful of ingredients. It has a bright berry flavor and thick consistency that makes it easy to layer, fill, or spoon onto desserts.

Ingredients
  

  • 350 g fresh or frozen raspberries
  • 70 g granulated sugar
  • 1 tsp lemon juice
  • ½ tsp vanilla extract
  • 12 g cornstarch
  • 15 ml water

Method
 

  1. Add the raspberries to a saucepan and cook over medium heat.

  6. Mix the cornstarch with water to make a smooth slurry, then add it to the raspberry mixture and stir continuously until thickened.

Once you have this raspberry filling in the fridge, there are plenty of ways to use it. It can turn a plain slice of cake into a fruity dessert, add a raspberry center to cupcakes, or give cookies and cheesecake a fresh berry layer.
