Sometimes a cake just needs a little something between the layers, and raspberry filling is one of my favorite ways to add it. I wanted something fruity, slightly tart, and easy to make, so I cooked down some raspberries with sugar, lemon, and a little vanilla.
It turns into a thick, spoonable filling with plenty of raspberry flavor. I especially like the little pieces of berries throughout because it makes the filling feel homemade rather than completely smooth.
You can use this raspberry filling between cake layers, inside cupcakes, spread onto cookies, or spooned over cheesecake and other desserts. If you have some raspberries waiting in the fridge or freezer, this is a simple way to turn them into something you can use in several different bakes.

- Add the raspberries to a saucepan and cook over medium heat.

- Add the granulated sugar and stir until combined.

- Add the lemon juice and mix well.

- Add the vanilla extract and stir to combine.

- Mash the raspberries until they break down and release their juices.

- Mix the cornstarch with water to make a smooth slurry, then add it to the raspberry mixture and stir continuously until thickened.

- Turn off the heat and allow the raspberry filling to cool completely.

- Transfer the filling to a bowl and it is ready to use or serve.
