I was halfway through making chocolate cookies when I looked at the bowl and thought…..why not make them black? 🖤

I had black cocoa sitting in the cupboard, and suddenly regular chocolate cookies felt a little too predictable. So I went with it and mixed up a deep, dark dough that looked almost too dramatic before it even reached the oven.

But I wanted something hiding inside. 👀

I made a simple vanilla cheesecake filling, froze little portions, and tucked them into the center of each cookie. Wrapping that creamy filling in the dark dough was probably my favorite part because once the cookies were sealed, you couldn’t see what was hiding inside.

When they came out of the oven, I waited just long enough for them to cool before breaking one open. 🍪

That dark-and-white contrast was exactly what I had pictured…..deep black cocoa on the outside with a soft, creamy cheesecake center tucked inside.
