Biscoff Muffins Recipe

Biscoff Muffins Recipe

If you’re a Biscoff lover, these soft and fluffy muffins are about to become your new favorite treat!

I didn’t plan on making muffins, but once I started thinking about that sweet, caramelized Biscoff taste, I couldn’t get the idea out of my head…..

Instead of keeping the cookies on the side, I crushed them into the batter and added melted Biscoff spread for extra flavor. The idea sounded too good to pass up, so I grabbed my mixing bowl and got to work…..

As the muffins baked, that familiar Biscoff aroma filled the kitchen, and I was already curious to see how much cookie flavor would come through. 😍

Warm, caramelized, and unmistakably Biscoff 🧁.

One bite in, and I knew these muffins were a keeper….. soft and fluffy in the center, with little pieces of cookies throughout. The melted cookie butter added a creamy finish that made each bite even better. ✨

The Best Part About These Biscoff Muffins

These muffins are perfect when I want something sweet without spending too much time in the kitchen.

The batter comes together with simple ingredients, and the crushed Biscoff cookies add little pockets of flavor throughout.

Soft muffins, sweet cookie butter, and a little crunch on top. What’s not to love?

The melted Biscoff spread gives the muffins a rich caramelized taste, while the soft texture makes them feel like a bakery-style treat.

And the topping? That extra drizzle of cookie butter and sprinkle of cookie crumbs makes them even harder to resist.

A Few Secrets to Better Muffins

  • Melt the cookie butter gently: Warm it just until it becomes pourable. Let it cool slightly before adding it to the batter.
  • Crush the cookies evenly: Keep the pieces small so they spread throughout the muffins instead of sinking into one area.

The Biscoff Layering Trick

The trick to making these muffins taste unmistakably Biscoff is using the flavor in different ways.

There’s melted cookie butter in the batter, crushed cookies folded through the muffins, and another little layer of cookie butter and crumbs on top. Each one adds something different, so you get that warm Biscoff flavor from the first bite to the last.

Simple Twists for These Muffins

  • Add a Little Chocolate: Fold a handful of chocolate chips into the batter for a chocolate-Biscoff combination.
  • Add Some Crunch: Chopped walnuts or pecans can add a lovely crunchy texture.
  • Add a Touch of Spice: A pinch of cinnamon can complement the warm caramelized flavor of the cookie butter.

How to Store Biscoff Muffins

I usually keep these muffins in an airtight container once they’ve cooled completely.

  • At room temperature: Store them for up to 3 days.
  • In the refrigerator: Keep them refrigerated for up to 5 days.
  • In the freezer: Freeze the muffins in a freezer-safe bag or container for up to 3 months.

Let frozen muffins thaw at room temperature before serving. You can also warm them slightly if you prefer them soft and warm.

Frequently Asked Questions

  1. Can I use regular flour instead of self-rising flour?
Yes, you can use all-purpose flour, but you’ll need to add baking powder and salt to help the muffins rise. Self-rising flour keeps this recipe simple.
  2. Can I use another cookie butter spread?
Yes, you can use another brand of cookie butter if you have one available. The flavor may vary slightly, but it should work well in this recipe.
  3. Why are my Biscoff muffins dense?
This can happen if the batter is overmixed or the muffins are underbaked. I mix the batter just until the flour disappears and bake until a toothpick inserted into the center comes out clean.
  4. Can I make these muffins without eggs?
You can try using an egg substitute, but the texture may change. The egg helps bind the ingredients and contributes to the muffins’ structure.
  5. Can I make these muffins without the topping?
Of course! The muffins are still delicious without the drizzle. I personally enjoy the extra cookie butter and crushed Biscoff cookies because they add more flavor and texture.
